When the folks from Tom Gore Vineyards invited us to a wine dinner at Lake Meadow Naturals (pictured above) back in May, it was still officially spring. Apparently Mother Nature had not been informed, as the heat and humidity seemed straight out of August’s playbook. Luckily the light and local menu, prepared by chefs from Outstanding in the Field, was a perfect fit with the heat and with the wines, the first ever named for a grape farmer.
While the dinner we enjoyed was a one-time-only affair, we’ve combed the archives of Edible Feast so that you can create a DIY version to enjoy along with the wines, which are available locally at Total Wine. Enjoy it outside if you desire, or pitch a picnic cloth over the dining room and crank up the A/C. We won’t tell.
DIY: Just substitute good quality butter for the schmaltz (rendered chicken fat), or try your hand at this easy recipe for braised radishes with pearl couscous from our own archives.
What We Enjoyed: Lake Meadow Naturals Pole Beans, 6-minute egg, Tomazin Farms dandelion greens, olives, lardons, potatoes and smoked-herb dressing
DIY: Toss green beans with Meyer lemon vinaigrette along with bitter greens, black olives and lightly steamed creamer potatoes.
