Buttermilk Bakery


Taissa Rebroff never thought she would work alongside her family, especially not operating a bakery. After Rebroff graduated from the University of Central Florida in 2012 with an English Literature degree, she stayed in Central Florida for a year before moving to New York to be a freelance food writer. While freelancing, she decided to take a job in Brooklyn doing what her mother and brother were already doing back home—baking.

Working at a Brooklyn bakery, Rebroff was surprised to realize how much she loved baking. In talking to her mother, Lana, and brother, Philip, they began to think about what it would be like if they worked together doing something they all loved. After spending time in Orlando during her college years, Taissa knew that the Central Florida food scene was particularly supportive of small, locally based businesses.

It took a few years to get off the ground, but in 2014, they launched Buttermilk Bakery and began selling baked goods to local food businesses like Farm-Haus, The Dinner Party Project, Propagation and Lineage Coffee Roasting. They also offer their decadent goodies at the weekly Audubon Park Community Market with double-baked croissants, savory quiches and their version of a breakfast toaster pastry.

The trio now has their first brick-and-mortar bakery in Winter Park, and has expanded their menu to include sandwiches on house-made bread and eventually, weekend brunches. Of course, they’ll also have the sweet and savory pastries and Rebroff’s favorite pies with decadent seasonal fillings like salted caramel apple.

Taissa credits a large part of their success to the immediate support of fellow small businesses.

“The community in Orlando is amazing. It feels like everyone wants to help each other succeed,” Taissa says. “Most local businesses and people who live here are just really wanting to make Orlando great and have different businesses, restaurants and events prosper,”
