Chef Q&A: Lewis English, Stefano’s Trattoria


We recently sat down with Chef Lewis English of Stefano’s Trattoria. This welcoming restaurant in Winter Springs makes comforting Italian fare from scratch and is well loved by its many dedicated regular guests.

If you could travel anywhere in the world to eat for one week, where would it be and why? Greece or India. The food has so much flavor.  The scenery is absolutely stunning in both places. And the culture is completely different than here.

Who had the biggest influence on the way you cook, and why? I look up to Stefano Lacommare. He taught me everything I know about cooking. Stefano cooks with passion and puts all his love into every dish he prepares.

What’s the one type of traditional cuisine that you always wished you could prepare, and why? I would love to learn how to prepare sushi. I feel that presents challenges and I love a challenge. It also is all about presentation.

If you weren’t a chef, what would your dream job be? If I weren’t a chef I would be a marine biologist studying my favorite animal…sharks!

What advice would you share with chefs just beginning their careers?Practice makes perfect. And even the best chef will burn a dish here and there.

If you could change one thing about Orlando’s food scene, what would it be? One thing I would change about Orlando’s food scene would be to have more independent coffee shops around the suburbs and not just downtown. It would be nice to walk down the street for coffee from somewhere other than a chain.

What was it like when Florida restaurants were in lockdown? During lockdown we went to all to go orders. We started to deliver to local neighborhoods as well.
