CHEF Q & A: Yuhi Fujinaga, Morimoto Asia

Executive Chef Yuhi Fujinaga has been with Morimoto Asia since 2015. The Disney Springs restaurant is the first pan-Asian restaurant by Japanese master chef Masaharu Morimoto, and features dim sum, sushi, noodles and entrees including Wagyu beef and Peking duck.

What’s your favorite local restaurant other than your own? There are a couple of restaurants my family and I enjoy going to, it all depends on what cuisine. Here’s a few of them: Gyu-kaku for Japanese BBQ, Prato for Italian and Bar Taco for Mexican.

What’s your go-to meal at home with the family? My wife’s Mabo-Tofu. Very simple, but my comfort food.

Where do you shop locally for interesting ingredients? We usually get a lot of our Asian market supplies and food at 1st Oriental Supermarket. They probably have the most variety here in Orlando.

Which kitchen gadget could you not live without? Cake tester.

What was your favorite bagged lunch as a kid? Onigiri, rice balls filled with various items such as salmon, seaweed, mentaiko (marinated fish roe) or ume (Asian plum).

What’s your most guilty junk-food pleasure? Late-night Taco Bell, Mexican pizza.

What 3 things are in your fridge at all times? Beer, cold-brew coffee and cheese.
