Chef Q&A: Jamie McFadden, Cuisiniers Catered Cuisine & Events


Chef Jamie McFadden has been serving global cuisine with a seasonal focus through his catering company for more than 20 years. More recently, he created Snowbirds Vintners, small-batch sustainable wines that pair well with a variety of foods to enhance Sunday dinner, date nights and more.

What’s your favorite local restaurant other than your own? A very difficult question, I have many favorites depending on what I’m in the mood for, however, I am constantly impressed with the entire dining experience that Dovecote provides. No matter a casual dinner at the bar or a special evening out, it’s always excellent!

What’s your go-to meal at home? Anything that I can prepare on the grill that involves fresh fish or seafood.

Where do you shop locally for interesting ingredients? I love to shop at Orlando Meats.  They have an impressive array of freshly butchered organic meats, fresh vegetables, and of course, Snowbirds Vintners wines.

Which kitchen gadget could you not live without?  Not a gadget, but my chefs knife.  It really is the most important tool in the kitchen.

What was your favorite bagged lunch as a kid? Pan-fried chicken, leftover from Sunday dinner. Yes, it was cold, but oh, so delicious!

What’s your most guilty junk-food pleasure? Huntsman cheese, and any Pinot dominant sparkling wine or champagne.

What 3 things are in your fridge at all times? Snowbirds Grüner Veltliner, Snowbirds Rosé, and Snowbirds Gewürztraminer!
