Chilled Watermelon-Dill Soup


Makes 4 cups

cups watermelon, seeds removed and cut into 1-inch cubes

2 teaspoons lime juice

tablespoon finely chopped fresh dill plus extra, unchopped, for garnish

1 teaspoon sugar

Pinch salt 

Pinch ancho chili powder

Combine all ingredients except cucumber in a large mixing bowl, stirring to combine. Add mixture to blender 1 cup at a time and blend until smooth. Refrigerate 4 hours.

Stir gently and pour into small bowls, demitasse cups or martini glasses. Top with fresh dill.
