We can’t get enough of Florida blueberries, and Florida blueberry bread is a delicious way to enjoy the bounty and share with family. Chef Marianne Hunnel uses this recipe as a base for other fruit breads too, but when Florida blueberries are in season blueberry bread is the way to go. Makes one loaf
1 1/3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/3 cup butter (room temperature)
2/3 cup sugar
2 large eggs (slightly beaten together)
1 teaspoon pure vanilla extract
2 cups fresh Florida blueberries (slightly mashed with a fork)
Preheat oven to 350F. Grease and flour a standard loaf pan. In a medium bowl, mix the flour, salt, baking soda and baking powder. In a larger bowl, cream butter and sugar together with a hand or stand mixer at medium speed. Add flour mixture a bit at a time and mix to combine. When mixture is well blended together, add beaten eggs and vanilla. Do not over mix.
Use a spatula to make sure all ingredients are well combined. Mixture will be a bit dense. Slowly fold in the slightly mashed blueberries and pour mixture into greased and floured pan. Bake for 50 minutes or until a toothpick inserted in the center of the bread comes out clean. Let cool for 10 minutes before removing from pan.
