Makes about 1 cup
1 heaping tablespoon lime zest, from about 3 limes
1 heaping tablespoon orange zest, from about 3 oranges
2 tablespoons thinly sliced sage leaves
1/2 cup coarse salt
Combine ingredients in a non-reactive bowl and set aside to dry slightly, about 2 hours. Sprinkle on roasted fish or poultry, or serve in small individual bowls at the meal.
