These spicy grilled Hawaiian pizza skewers are the perfect make-ahead to take to a party, or to enjoy with a cocktail as they come off the grill. Spicy Grilled Hawaiian Pizza Skewers

Makes 12 to 14 servings

1 small pineapple, cored and cut into 1-inch cubes (reserve 2 tablespoons of juice)

2 yellow bell peppers, cored, seeded and cut into 1-inch squares

2-3 jalapeño peppers, sliced into rounds (remove seeds if you want less heat)

1 red onion, peeled and cut into 1-inch squares

1 8-ounce block of low moisture mozzarella cheese, cut into 1-inch cubes

1 loaf crusty Italian or ciabatta bread, cut into 1-ince cubes

2 packages Volpi Prosciutto slices

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon freshly ground black pepper

½ cup of your favorite barbecue sauce with the 2 tablespoons of pineapple juice added to it

Equipment: Outdoor grill or grill pan for stove-top grilling; 12-14 bamboo skewers

  1. Soak skewers in water for at least 30 minutes. If using an outdoor grill, prepare charcoal and have coals at 350-400F before grilling skewers. (They should be red hot but turning gray around the edges.) If using a grill pan, heat over high heat until very hot, but not smoking, before using.
  2. Place all ingredients except prosciutto in a large bowl and toss with olive oil, salt and pepper. Separate the slices of prosciutto.
  3. Assemble the skewers by threading pineapple, bell pepper, jalapeno, onion, cheese, bread and prosciutto onto the skewers, alternating them (they can be touching). Place assembled skewers on a baking sheet.
  4. When the grill or grill pan is ready, grill for a total of 4-5 minutes, turning every minute to avoid burning and until all sides are evenly grilled.
  5. Serve immediately with barbecue sauce on the side.
