8 cloves fresh garlic, shaved or minced
3 tablespoons Turkish Urfa pepper*
¾ cup extra virgin olive oil
1 tablespoon fennel pollen*
¼ cup coarse salt
2 teaspoons black pepper
48 hours prior to cooking:
Season meat well, covering evenly. After 24 hours, flip or mix meat to coat meat evenly.
