Makes 4 cups
4 cups watermelon, seeds removed and cut into 1-inch cubes
2 teaspoons lime juice
1 tablespoon finely chopped fresh dill plus extra, unchopped, for garnish
1 teaspoon sugar
Pinch salt
Pinch ancho chili powder
1 Combine all ingredients except cucumber in a large mixing bowl, stirring to combine. Add mixture to blender 1 cup at a time and blend until smooth. Refrigerate 4 hours.
2 Stir gently and pour into small bowls, demitasse cups or martini glasses. Top with fresh dill.
